We have, of course, never had the chance to do this in Malaysia, but in the farm that we stayed in in Australia, T1 got to pick some fresh out of the hens’ bottoms eggs last September.

Ack! I was so disappointed that her brand new New Balance shoes were getting soiled in farm mud. Why didn’t you wear your old shoes? I nagged her.

For the first time, we got to see what fresh eggs looked like.

And then we got to TASTE what fresh eggs tasted like.

So how do you tell if your eggs are fresh?

Dip your egg in a basin of water. If the egg sinks to the bottom, they are very likely fresh. As the egg gets less fresh day by day, air enters the egg and makes it more likely to float in water. If no part of the egg touches the bottom of the basin, please chuck it out. Your egg is stale.

Also, if you broke a raw egg onto a flat plate and if the egg was FRESH, the egg yolk will stand tall and high with the egg white showing a murky colour (presence of carbon dioxide when egg is laid) sticking close and tight to the yolk giving a compacted appearance. As the egg gets less fresh, the yolk gets flatter and the egg white gets thinner and more clear in colour.

Super fresh eggs are best for frying sunny side up or poaching and not so fresh eggs more suitable for making omelettes, baking in cakes or anything else.

So do fresh farm eggs taste any different from supermarket city eggs? Fuck, beats me, man…..they all taste like eggs to me!
