Well, that depends if you’re cooking a Western dish or a Chinese dish…..
If it’s a Western dish you’re cooking, then really, you don’t even need a knife for this. All you have to do is break the asparagus off at it’s crunchiest point, throw the stem part out and cook the remaining part of your asparagus.
But if it’s a Chinese dish, then it’s an entirely different story. First, you have to shave off thinly the skin (because sometimes it is too stringy), then cut off the stems (an inch or two from the ends, depending on how fresh your asparagus is) and then cut diagonally into two inch strips.
Last December, Mom got her little elves (Tee and my youngest brother’s girlfriend) to help her with the asparagus killing cutting. But look at Tee, whilst she is cutting her asparagus, her eyes are on Disney Playhouse Channel!!!
FAIL……mati-mati (die-die) FAIL.
