Liquid Nitrogen and Frozen Avocado Beads

What happens when you have minus 196 degrees Celsius of liquid Nitrogen smoking in a pot? You do NOT touch it. If you do, you can start filling up the form to join the Fingerless Anonymous Society.
What happens when you squirt little droplets of mashed avocado through a plastic bottle into the liquid Nitrogen? Your Fairy Godmother appears after you recite Bippity-Boppity-Boo three times whilst stirring consistently with a wooden ladle. No, I’m kidding.
You get frozen avocado beads. When they have thawed for 2 minutes in room temperature, they are wonderful to eat. Wonderful alone or eaten accompanied with a dish.
